Great replies. You all crack me up. I had a couple that were great, just a nice bite, but others that came out hotter than heck. Maybe the problem was not enough cold beer---problem solved? have a great weekend.
How completely appropriate that "fireguy" is the first reply. Yep, I seeded the jalapenos. I have had poppers before with no problem but these came out real hot. Maybe a combo of the pepper and the pepper jack.
Anyone ever stuff more mild peppers like Anaheims to deal with heat issues?
I did my first round of ABT's today, stuffed the peps with some cream cheese and pepper jack. All I have to say is those of you who can take the heat of these things are friggin' nuts. the mouth is on fire! I am usually a huge fan of spicy food. What a bunch of nuts you all are! Any hints...

Follow up on my solo Saturday night with the significant other off at a wedding and me home to smoke all by myself. I opted to smoke the whole rack of spareribs untrimmed instead of doing them St. Louis style, and thanks to an earlier suggestion cooked a whole order of dutch's wicked beans...
I did a smaller one not too long ago and it cooked quicker than I expected so check temp often. Also, you might want to wrap in foil towards the end to retain moisture. You can also chuck it in a brine, which worked well for me the one time I did a pork loin. Good luck.
