Follow up on my solo Saturday night with the significant other off at a wedding and me home to smoke all by myself. I opted to smoke the whole rack of spareribs untrimmed instead of doing them St. Louis style, and thanks to an earlier suggestion cooked a whole order of dutch's wicked beans (fabulous recipe dutch, thanks for sharing!). I slathered mustard all over the ribs and gave them a good rub, followed the 3-2-1 method for ribs in my ECB. Temps stayed on the low side for most the smoke and the ribs were good but not my best--a bit on the dry side. Still, a great night and a good smoke. Here's some q-view of the gluttony-fest.
