    First Smoked Pork Shoulder

Your pulled pork looks great. Temp stall is very typical with smoking pork butt, at least that is what I found. For me it runs up to about 190 and then just stalls there, it is like watching paint dry for it to get those last 10-15 degrees. Great job on the pulled pork.

    Makin' Bacon

It is finally done. This morning I put the bacon slabs in the freezer for about an hour. Got out the trusty old little slicer and started slicing. The 1st slab could have been in the freezer a little longer. Once all sliced, we divided up the bacon in small amounts. Also kept the Brownsugar...

    Makin' Bacon

Smoking is done! It was kind of late by the time I got things cleaned up so the pic's were delayed till today. Sorry. Got some nice color on the pork Bellies. When do we stop calling the pork Bellies and start calling what they are, meat candy! or Bacon for the traditionalist. Total time in the...

    Makin' Bacon

Alright we have an update. Today is smoking day! Yesterday I took the pork bellies and rinsed them off and soaked them in ice water for about an hour. I dried them off and let them air dry for about 15 minutes before putting them back into the frig for an overnight rest. This morning I...

    Makin' Bacon

You can never go wrong with meat candy! I have been putting this off for far too long, decided this was the time to do it.

    Makin' Bacon

This will be my first try at makin' bacon. Got myself a pork belly and cut it into 4 pieces. Weighted each piece and calculated how much tender quick I needed. I measured out how much brown sugar that I would need for one and how much maple sugar that I would need for another. 2 of them will...

    TEXAS STYLE BUTT

The last time I smoked a butt I also tried vac sealing some pulled port. I got to say that is the way to go to have pulled pork at a later time. Taste just like the day I smoked it. Nice looking butt, now I am in the mood to do a butt myself.

Turning an MES 40 into a dehydrator

1st try at using the MES for a dehydrator with my fan mod looks very promising. I did a batch of jerky last week prior to the mod and it took about 6 hrs. Today I did another batch and I knocked off 2 1/2 hrs! The first 2 hrs I did not use the fan as I wanted to add a little smoke flavor...

Turning an MES 40 into a dehydrator

I do have something similar to that I use with my router when I am doing woodwork. Not sure I will need that though, The little fan that I am going to use really doesn't move much air, we will see. I will have it ready if I notice it is pulling too much air thru the smoker.

Turning an MES 40 into a dehydrator

Thanks for the tips. I figured that I would most likely have to adjust the vent a little. I was thinking that the fan may pull enough air that I may not be able to maintain the desired temp without closing the vent a little.

Turning an MES 40 into a dehydrator

Picked up a 4" Sewer and Drain end cap at Home Depot this evening and threw this together. Layout seems like it will work, now time to cut the 3" hole. Fits nice. Looking good. There we go, I think this may work. I have another chunk of pork loin thawing so that I can slice it and do...

Turning an MES 40 into a dehydrator

Ok, so I said what the heck build it and see how it will work on my next batch of jerky. I am going to go the route of using a 4" pvc pipe end cap and a small 3"x3" muffin fan that I had. I do not have the end cap yet, I will get that later today. But since I have the fan might as well get it...

Turning an MES 40 into a dehydrator

It looks like you just set it on the outlet of the smoker, is that correct? Pulling 150 degree air has not done harm to the fan? I was looking to put it on the inlet but it would be whole lot simpler to just set the fan on the outlet of the smoker, no fancy brackets or mounts needed. I found in...

Turning an MES 40 into a dehydrator

That is what I was looking at doing. Glad to hear it works.

Turning an MES 40 into a dehydrator

Ok here is my idea. Do you think it is possible to make an add on to my MES 40 to make it a better dehydrator? My idea is to use one of those muffin fans that are about 4" square, similar to the ones used on computer power supplies. It would be mounted to the clip loader opening. I like to add...

Scrapple, French Bread, and Maple Syrup

French toast looks yummy, I would of added a little cinnamon to the egg mix though. You can keep that scrapple! Never acquired a taste for scrapple, wife loves it, me not so much. Maybe if I put enough of maple syrup on it I might be able to eat it, not sure?

    pulled pork issue

Every pork butt that I have done I went 205, which ended up being anywhere from 16-22 hr smoke. Wrap it in foil and stuff it in a small cooler and rest for a few hours. After that waiting period the pork but almost falls apart on its own.
