    So I just ordered a pound of Cure #1 from Amazon and delivered today (in less than 24 hours). It has a best by date on it of 2024. I pulled out the old package of cure that I have had at least 4 years and the best by on that one is Nov 2023..... Makes me wonder if they "adjusted" their best...

    Thx tbern. I hemmed and hawed for long time (I tend to be a worrier) before I tried but it is easier than I thought it would be. Just measure the salt, sugar and cure carefully. Get a gram scale. Once you get the process down, you will never go back to store bought again.

    foods that don't hold up well in the freezer

    I use a Foodsaver for freezing. I have some pulled pork in the freezer, in Foodsaver bags from last June and they taste just fine. Heat um up, add a little sauce and in a few minutes lunch is ready!

    We bought a Speed Queen washer and dryer after our Maytags died after about 10 years. Good reviews and from what I read, they are basically commercial units sold as residential use. Had them for about 2 years and running strong.
