I smoke sunflower seeds, in shell, all the time. I usually add some olive oil and then spices depending on my mood. The beauty of it is that you can use just about any spices. Then when you smoke it you just go until they dry back out.

I am using Morton's Tender Quick Cure, and I used an amount based on the instructions on the bag, though that isn't for bacon specifically, it says 1/2 oz. per lb. of meat. Since I had 2.5 lbs of pork belly, I used 1 1/4 oz.

I've searched and saw a couple of older threads about smoking sunflower seeds. I thought about this last night, and will definitely try a batch over the weekend.
My plan is to buy roasted/salted sunflower seeds, then I'll mix them with some olive oil, and add some additional seasoning to them...

I'm figuring out the smoker still, and when I get all the little intricacies down, food will come out much better. In this case, I was still bouncing between the medium and high setting over the cook time (checked temp every 20 minutes or so). I am definitely getting the digital control...
