    WSM ON SALE ON AMAZON

I'm sorry but I've laid 2 racks of st. louie ribs on the top layer of my 18.5 inch.  Keep in mind it's gonna shrink.  It's easy to glorify the 22 inch on the internet but before someone goes out and purchases one, try to see what it actually looks like.  I've seen the 22 and in my opinion (for...

    weber smokey mountain

quite honestly, I doubt that you'll find one, especially for that price.  They're superior machines and folks rarely get rid of them.  But I bought one last November for $299.  Amazon had a crazy sale on them and they were completely sold within a day.  Keep checking online and Craigslist.

    My first brisket

Dont beat yourself up. Brisket is without a doubt the most difficult meat to smoke. I've been smoking for years and I still have not produced a superior (or what I consider superiour) brisket. Keep at it, do[t give up.

    WSM preserving charcoal

Thanks gents. I did close the vents last night. I'm about to throw a few ribs on the WSM. I just checked and the charcoal that I used last night still looks good. Not broken up and ash like yet. But I am preparing some more charcoal in my chimney. Wow, I'm going to save a lot on charcoal...

    Pricing baby back ribs

I apologize for not directly answering your question but I just bought a 3 pack of St. Louis style ribs from Costco.  I got them for $23.00. The reality is, ribs like everything has gone up. I prefer spare ribs and then to cut them down to St. Louis, since it's pretty much the same (in my...

    WSM preserving charcoal

Hey gang, I've been using my 18" WSM for over a year now.  Prior to each smoke, I'd clean out the ashes from the previous smoke.  Earlier today, I used 2 chimmney's of Kingsford charcoal to smoke about 18 wings.  After 2 hours, they were done (and tasty).  But the smoker was still going at 300...

40 lb.s of Kingsford Charcoal $12.88 @ Home Depot This Week

I'm down to my last bag of charcoal.  I'm going to pick up 2 or 3 sets of those 20lbs.  I do a lot of smoking.  That should hold me over until Memorial Day.  I just can't go back to that dang Masterbuilt.  Once you've had WSM, you'll never go back!

40 lb.s of Kingsford Charcoal $12.88 @ Home Depot This Week

Yeah, I agree with Bruno.  Don't go to crazy because Memorial Day, 4th of July and Labor day, the price will drop to something like 5.99 for a double bag.

My First Spatchcock Chicken - w/QView.

looks great. To get crispy chicken, after brining, you can leave the chicken uncovered in the fridge for 4 hours.  Also, a little olive oil on the cooking bird in the high heat will get the skin crispy.

Where do you buy your supplies at?

Bearcarver covered it perfectly.  All I'll add is, with wood chips, there's the possibility of over smoking.  If I remember correctly, Masterbuilt suggests that you add chips every 20 minutes or so.  Imagine if you're smoking a 9lb pork butt--that's to much work.  The AMNPS takes the difficulty...

Where do you buy your supplies at?

i was under the assumption that everyone uses pellets from Todd, using the AMNPS. In my opinion, if you're gonna use the Masterbuilt, why not use th AMNPS.  I'm not gonna bore you with information that's all through here.

    Smoking pork butt

Youll have to provide more information.  What type of smoker are you using; however, you may find the information in the below link useful: http://www.smokingmeatforums.com/t/127249/doing-a-couple-of-pork-shoulders#post_856490][/

Where do you buy your supplies at?

If I''m using my Masterbuilt, I get my pellets from Todd--I generally will buy 10lbs of Pitmaster pellets.  If I'm using my WSM, I wait until Home Depot has their sale on charcoal--it's $5.99 for a double bag.  I'll buy 50 sets.  That'll last about a year. I make my own rubs and sauce. Just...

    Commercial smoking vs. backyard smoking

I live in Charlotte, N.C., we ain't known for good BBQ joints. Folks who are moving into the city don't know their head from their asses.  Got no idea of what good BBQ is--so they frequent crap joints and brag about it.  This is why I do my own smoking. I can tell the difference btwn good and...
