I googled phostphates a while back and didn't find any reason why phosphates would be a "good" addition to home made sausages. Can someone tell me what the benefit is? Thanks!
I ran out of Lisa's bags a week or two ago when doing some bacon. Procrastinated ordering more and I paid for it this weekend. I did 30lbs of brats and had to use Rival and foodsaver bags! I hated paying for them, and the Rival bags made my sealer keep overheating which I haven't had happen...
You never cease to amaze me,Pops! lol That is a good housing! I wouldn't think the AMNS would get hot enough to cause any dilemma if it were low in the box and near the air supply. Just my thoughts, I know mine stays cool.

Welcome Jen! Sorry I can't help ya out on the Coleman. I can't believe you've waited this long to smoke something! Hopefully someone will give ya some info. Otherwise, a good, not necessarily expensive, smoker may be well worth the expense.
It doesn't make sense that moving the probe would make the temp jump and moving it several times didn't help keeping your temp up.
Don't give up. Read some more brisket posts here to see how others are doing it and in the mean time try smoking something else and see how that goes for ya.
Definitely addicting. My wife told me a couple days ago "You need to eat what you have before you go making more." haha But.... there are so many other sausages I want to make!!!
Good to see ya back! My son has asked me everyday for the past several days if I would make "the pork with the finishing sauce". He's 9 and loves good q! I made a rib roast today and he asked if the au jus was finishing sauce! He's hooked!

Thanks JJ. I can't imagine trying to thin slice mushy stuff. This I made slices nice and pulls apart easily. You can definitely tell it apart from regular sausage.
