I don't have a charcoal smoker but I notice your chimney starter looks full to me. Maybe next time try starting with less charcoal to help hold down your temps. I'm sure one of the charcoal smokers will chime in and give you some more advice.

I was wandering how you made out with the storms on Friday, Stan! I live between Findlay and Lima and it raised H**L here. We were without power for 30 hrs and a lot of people in the area are still out.
That piggy sure is enjoying that sauna, and getting a nice tan too!
Ron, you could use the collagen casings for breakfast sausage. I used sheep for mine and they are a PITA to work with when you have big hands. Next time I'm thinking about using collagen myself.
