    Chris, Thanks for the point and the idea! The crescent roll was really good as a crust (soft and flaky) but stayed on the fatty at the same time. I was a little worried that it would just fall apart but it didn’t. Dave

    Sous vide and smoked pork butt.

    I’ve smoked until the stall, then immediately into the SV, I’ve gone into the fridge and even into the freezer before SV. I usually don’t smoke to finished temp as to keep moisture in the meat.

    I have a LoneStarGrill 24”x48” and love it. It heats up fast and holds heat and smoke very well. I really like the grill/griddle feature on top of the firebox. The fit and finish is awesome. Here is a photo. If you need anymore info or photos I can post.

    Graduation Party Butt and Chuck Smoke
