I'm going to brine the bird overnight. My biggest decision is to spatchcock it or not.

Planned on smoking a rack of ribs later today. We are having high winds in south eastern PA. I have an MES 30. Will the winds effect the smoker??

I picked up a pork shoulder today at Costco. Got it home and noticed it was boneless. Weight is around 6 1/2 lbs.

Putting it on at 225 degrees
Will it take longer without the bone or shorter to reach 205 for pulling?

I just received my cold smoker attachment for my MES 30. I followed the directs and just did a test smoke. I filled the chip cylinder up about half way and got 2 hours of smoke out of it.
I didn't turn the smoker on and the smoker didn't go above 82 degrees.

Today was the maiden voyage for my MES 30.
I smoke a rack of St Loius Ribs, a pan of Mac and cheese, and a pan of bean.

I purchased the cold smoke adapter for my MES.
I haven't even taken it out of the box yet. Would this help with constantly adding chips?? If not I will purchase the above mentioned product.

I have a MES 30
The ribs have been on for almost and hour and I checked the chip tray and it was just ash. Dono added more chips.
Should the chips burn up that fast. A cup in 45 min. The Smoker is holding temp at 230.

Put the St Louis ribs on the smoker about a half hour ago at 230 degrees. Smoker is holding good temp but the smoke coming out of the vent has tapered off.
I put a cup full of apple chips in the pan and had great smoke at first. The vent is wide open.
