I'm with mballi on this one. Poultry doesn't benefit from the low temps, so if you smoke them hot, you can still get some nice skin going on without sacrificing juicy meat underneath.
I personally was never able to use briqettes in a smoker environment withouth them smothering themselves out in all the ash they create. I can run my smoker on lump all day and all the ashes fit in a small coffee can. You do have to contend with some small pieces, but I find the good far...

St. Louis ribs are just spare ribs that have been trimmed to remove the extra piece of meat with the riblets on the thick end of the rack. There is a great tutorial on this site somewhere. Just do a search and you will find it. Good luck.
Some briskets are just tough. You can do everything right, and still get a chewy one sometimes. Try doing the bend test in the store before you buy a brisket. Grab it and try and bend it. If it's pretty flexible, you can usually count on it getting tender. If it's stiff as a board, put it back.
I think they are the vacuum packed whole packers like you get at Sam's. As long as they don't say "enhanced with a ....solution" on the label, they should be fine.
I don't pretend tobe a gardening expert, but I can't see the harm in using treated wood. I've seen hundreds of raised gardens and flower beds using RR ties. And like AK1 said, wood doesn't get any more treated than that.
