    Turkey ham

I love "hammy" smoked turkey. My dad used to get one every fall from the Amana Colony Smokehouse. They were a real treat. Until I read the thread that Pop's posted a couple of years back, I was never able to get that hammy flavor, no matter what brine I used. It's the cure#1 and pickleing time...

    WSM questions before purchase

Certainly no offense taken here, Al. Like you say, it's an opinion. I do agree that a good quality temp and air flow regulating device such as a Guru would be an excellent addition to the WSM. I definately want to add it to at least one of my WSM's. Maybe you could ask your Genie to grant me a...

    WSM questions before purchase

Grapics, I have 2 WSM's and a Cajun Bandit WSM clone. They are all excellent cookers. There is some temp variation at every level. Mine run about 30° lower at the bottom grate than the temp gauge. The top grate is usually about 25° lower than the lid temp gauge. All 3 are just a bit different in...

    Landjaegers PT II

Yup, that is an excellent reason for doing such a thing to a sausage. Another very good reason, is so that you could carry your sausages AND your cigars in the same pocket, and not have to worry about making any mistakes when you want to enjoy either one!

    Supper Time

Had to try out the Kielbassa, so I opened a jar of kraut and squeezed the juice into a sauce pan. Cut up a few red taters and tossed 'em into the kraut juice w/ a little S&P to simmer for a few minutes. Cut up one of the 'bassa rings and tossed that in. Simmered a few more minutes. Dumped the...

    Landjaegers PT II

Karl, he does that so they won't roll off the kitchen counter! I think he has some ferocious sausage eatin' canines lurkin' about, just waitin for the worst (or best depending on who's perspective you're lookin' at) to happen.

    Say Cheese!

The temps are very nice here in Iowa today, low to mid 70's, so it's time for some cheese. In this lineup we have Mild Cheddar, Pepper Jack, Sharp Provolone, Mild Swiss, Colby Jack, Muenster, Mozzarella, Farmer and Gouda. Cold smokin' 'em in the GOSM w/ AMNS filled with Peach. Ambient temps at...

How do you turn a WSM off?

Shut all the vents. A WSM isn't air tight so if the top vent is open, it can still draft. Even with all of them shut, it can still take a while to die down. There is quite a bit of condensation in most smokers, even with no water in the water pan. Nothing to worry about.

Roasted Oysters In The Big Easy

Hope Nepas sees this. He's moving down Savannah way in a few weeks. Oyster Racking looks like it may be something that's right up his alley.

Baby backs on the old Weber Kettle

Thanks Al. I love my Webers. Learn how to control the temps and you can cook just about anything on 'em.  As usual, you guys are about to cost me a few more Sentavo's.

Muenster with the AMNPS in my Smoke Vault (update-ready to eat)

That cheese looks perfect! Just added Muenster to my growing list of cheeses to smoke. The weather here in Iowa is starting to get very nice. Sunny and low to mid 70's Sunday and Monday. Lets see, Kielbassa in the MES 40 w/ AMNPS & Hickory and Cheese in the GOSM w/ AMNS & Peach. I think I see a...
