Thanks Bob, but it seems to be reading the meat temp correctly...it's the temp inside the smoker that seems to be way off. I don't believe I can put that part in water. Any other ideas?

I'm in the process of smoking a turkey. I set my MES on 295 (the highest it can go) At this time the smokers says the temp is 258 and the thermometer says the temp is 271. HUGH difference! It seems to have the bird temp correct as I have another digital probe inserted into the bird and they...
Thanks Pops. I'm not cooking anything else so I should raise the bird? I have a masterbuilt electric 30. It's on the bottom now, but I can raise it if you feel that is a better idea. This is my first bird...hope to have some nice pictures later.

Thank you for your help. Although Jeff's recipe sounds great, I was thinking of making my own brine. What do you think about apples and garlic? I thought I'd brine the bird in 1/2 water and 1/2 apple juice with salt and garlic. Under the skin I think I use the garlic butter recipe and smoke...
