    sausage stuffers

    can anyone recommend a unit that will work well (and come with)  smaller diameter nozzles?  I make a TON of snack sticks..in both the 19mm and 21mm sizes, and the "shooter gun" that I have really is a PAIN in the butt to use..it works, but I can only load a small amount of casings on the nozzle...

    Venison Snack Sticks

    they weren't too dry for you?  Venison is a very lean meat..and I've made 100% venison sticks too...and while I like them....my family LOVES when I add about 20% ground pork into the venison..boy, they stay super tender, and moist snack sticks then...give it a try, I think you'll like it. Dan

    yep..I've done alot of work on PIDS as well...and if you know what you are doing..they are great...I would also suggest to order the PID setup from Auberins...they have nice equipment, and the directions come in ENGRISH as well. :) Dan

    DO NOT go by the MES's digital thermometer, I have found mine to be anwhere from 15-30 degrees off, depending on outside temps, wind, etc.  Get a Maverick ET732...you'll be glad you did. I prefer to do my brisket at about 250F....foil at 165F with a cup or two of apple juice to really steam in...
