What is you favoiete wood for smoking sausage ..... why?

All the old timers, including my uncle use hickory for flavor, mostly cherry for the color. So blending is key from my neck of the woods.. Everyone tells me cherry always for kielbasa.

    Baking powder for crispy skin

I read some where that either rubbing the skin with some baking powder or soda on surface skin, will help render out that fat... Any ideas? Or folk lore! ?? I'm a big fan of the brine method for flavor and moisture, still workin on the crispy aspect ... The grill maybe the finishing answer in...

Thats a heck of a build up, looks like this unit was not taken care of, and cleaned on a by use bases, but its just a matter of scraping off the build up of creosote. I get my off set really hot, and give it a good steam bath with the garden hose, and steam all that crap off, reseason, the...

Couple of Pork Shoulders Going in shortly. Elec. Smoker... water pan question inside.

Well, from experience with the electric smoker, we dont want to but any fuel product in the water pan, the water pan is for drippings and moisture, such as beer, juice, water, etc. It will never get hot enough to smoke wood chips or even lump charcoal. The heat source (coil) and being at the...
