    Prime Rib w/Q View

Took the opportunity over the long weekend to do my second prime rib over the holiday weekend. This one was done with a hickory/cherry mixture. Was a shorter smoke than last time. From lighting coals to done was about 3.5 hours to reach 136 IT as the WSM was running hotter this time around...

    Weber Smokey Mountain smoker

That is my only complaint about mine as well. As for the water bowl, I foil and fill with hot water but I am still learning too. I tried my ECB w/o water once and the drippings caught fire and charred my fatty so I am scared to death not to use water now. Not trying to scare you just my...

    Weber Smokey Mountain smoker

There is not a ton of action but when I got my WSM, I joined the following group - http://www.smokingmeatforums.com/groups/show/17/wsm-owners-weber-smokey-mountain I agree you got a good smoker there. I just got one over the winter and am 3 smokes in on it and absolutely love it.

    Any Illinois Residents? Wednesday/Thursday Weather?

Thanks again for the info, ernest. I saw the same thing on weather.com so I'm thinking if both are on the same page then a pretty good chance of it happening. We went ahead and moved travel up a day to go through on Wednesday instead just to be on the safe side. Stay safe if it gets bad!

    Any Illinois Residents? Wednesday/Thursday Weather?

I'm just curious if anyone from Illinois can chime in on what any of your local stations are saying about the potential for severe weather on Thursday. My wife is going to be driving through from Indiana on 74 into Bloomington and then up 39 into Wisconsin. I saw weather.com has a pretty nasty...

    Baby Backs w/Q View

These were actually my first baby backs (have been a spare rib guy to this point) but won't be my last. I used Honey Mustard as a glue and topped generously with brown sugar, then sprinkled with a mixture of paprika, pepper, salt, and garlic powder. Wrapped and rested overnight. I smoked with...

So what do YOU have planned for Easter Dinner?

My favorite! I'll be having a few of those when I'm smoking the baby backs for Easter Eve! Not to hi-jack the thread, but have you tried their Helles Yeah yet? Pretty tasty, IMO.

So what do YOU have planned for Easter Dinner?

We are having ham at my wife's insistence and the only ham I have ever found to actually like is from Honey Baked Ham Co so will be picking that up on Friday. The rest of the menu is hash brown casserole, green bean casserole, Hawaiian Sweet Rolls, and a pie from a local shop for dessert...

    Rib Rub Glue Question

My MIL is coming over for dinner on Saturday and the wife has asked me to do ribs. From past experiences, I know she likes ribs very sweet. I normally either use yellow mustard as a glue or none at all if I am in a hurry. My rub is then usually a mixture of brown sugar, salt, pepper, and garlic...

What's everyone's favorite wood to use?

I'm on a cherry kick right now myself. My go to is usually hickory when I am undecided and have been using pecan more frequently as well. I'm planning on picking up some maple soon. Here is a link that should help you out. http://www.smokingmeatforums.com/t/50439/woods-for-smoking

    Hi, My Name is CaptainWoody

It doesn't matter what you use, just that you learn how to use what you have. My first smoker was the ECB (El Cheapo Brinkman) to cut my teeth on before I upgraded. I lived for about a year in North Branch and about 8 months or so in Elk River.
