    ThermoWorks probes - alternative/compatible brands?

I have had a Smoke for about six years that finally gave up. I only had to replace one probe over that time, and the went through the doors on both my cookers. I now have a Signals and only have used it once, but hope the new probes hold up. I don't know of any aftermarket probes that are...

    My 1st Tri tip!

Ryan, tri-tip is also on my short list, which ironically had gotten quite long in the short time I have been on SMF! Stalling a cook is something I have had to learn. My wife is an RN, she never gets home the same time twice, so I have to adapt. Looks like you were also able to adapt. Well...

No worries, had an old gent tell me a long time ago as I had water running out the SIDE of my camper "Ahhh camping, a trial by fire every time you hook up!", lol.

    My wife's favorite chicken

This was actually my first build. All 304 stainless grill, mild steel arm and post. The square tube has a hole drilled through the the slot goes at an angle from the front of the top hole to the back of the bottom. The whole unit tips on and stays up with the weight, which is about 35lbs...

    Newbie here!

Welcome! Coming from Central WI I'm interested to see how it performs in the cold also. When I built my big stick burner I made it double wall, it will hold rock steady at -22°F.

Got myself a smoker on a trailer, never smoked before.

Welcome from Central WI! That is one heck of a score! Once you get the Inkbird in there and figure out how it acts when firing up and stuff, I'm sure you will find it is not that hard to keep an even temp. Good luck and happy smoking! Jeremy

    My First Fatty, Bacon Cheeseburger

As I have been running around stealing a couple minutes here and there to look at what is all going on I noticed this showed "Featured". Not until this morning did I realize my fatty was on the main page! Thanks and it is an honor to be featured.

    The Beast

I've never been able to gauge it well. When the meat is nice a crystallized I can fill the top pan and push it through about as fast as I can. If I had to guess I could put 15-30 lbs a minute through it. It does have a 1 hp motor through direct drive.

    The Beast

A quick picture of the meat grinder I built a few years back. I used a #32 Weston grinder and machined the top and feet parallel. Then I cut the auger end off and stubbed in the female end of a 1/2" drive extension. I used the other end of the extension for the top shaft of the gearbox as a...
