    I've done the salt crusted in a convection oven and they always came out wonderfully. Make sure you catch the drippings, they make a great rue.

    Probably the only part of smoking salmon I don't like is pulling those bones, it's really easy but it takes a few minutes to de-bone a couple filets, but needs to be done.

    Welocme to the site, you should go to the Roll Call section and introduce yourself and let us know a little about yourself. I've done a few turkeys on my Weber Kettle, 12-16 pounders with no problem but they weren't beer can style. Are you wanting to stand them up like a beer can chicken?

    Smoked Hen--not too good

    Sounds like you may have gotten a bad bird, that happens sometimes. I've never had a problem with Fryer or Game Hens that I can remember. On a side note: Next time you might want to pull your chickens at 165°, and let them rest a bit, 175° will almost guarentee a dry bird.
