    CORRECTION My bad, when I wrote this I meant: Seriously, being a newbie, I've heard some don't remove it, to me it makes sence if you remove it for less tough ribs. It's amazing what football and beer does when you're typing.

    UPDATE: I raised the baffle in the pit about 2" and tweeked my charcoal basket in my fire box to allow a bit more air. BINGO!!! I did a dry run tonight with some left over Kingsford and played around with my baffle and tuning plates. I can get my temps up to 225° in 20 minutes with a...

    I have 3 nice full slabs of BB's that I just prepped for tomorrow, and I was wondering what the consensus was about pulling the membrane? I've always done it with my past and have now, but was wondering what others do.

    After looking at mine last night and your pics today, we about have the same set up. I believe the plates are to low and not enough air can flow under them. I'm going to raise my tuning plate and drill a couple holes in the baffle tonight and see what happens.

    Glad to hear most everyone doesn't let the weather slow them down. Even though I've lived in Florida for close to 30 years, I still have that thick Michigan blood and enjoy cold weather. I could see myself smoking in less than favorable conditions. Flash, that's one sweet looking Red Fish.

    Yeah, this question was directed more towards our northern friends, I don't think we have more than a few days down here where it might be to cold to fire up the smoker. I used my Weber year round the last few years and hope to do the same with my smoker.

    That's a monster, the first one I did was about ½ that, nothing wrong with a big butt though, just plan on having a lot of time. $1.80 lb. is a good deal.
