    8 minute Ribeyes on the Kettle w/qview

    Ribs for a different purpose

    Id smoke for 2 or so hours like normal to get a deep smoke flavor along with some of the Bark formation on the ribs. Should add some complexity to the dish.

    Tri tip

    The ones you had me do were around 2.5lbs give or take. Outside of the west coast Tri-Tip isn't know as much so its a novelty/specialty cut so they charge a premium for them. Sadly people pay for it.
