    Welcome aboard That is how I started off. By learning the basics. Pork chops, ribs, loins, shoulders, chicken and Turkey before giving brisket a go. Gave me the opportunity to learn some basic stuff before attempting brisket. Look forward to reading about you progress in becoming a pit master.

    Looked around my wallet world and had no luck. Even the store clerk couldn't find one either. So I picked up an instant pot sous vide at Freddy's. It was $69.99 on sale and another 20% off. So I think I got an ok deal. Look forward to trying this device out and learning from you guys on here...

    Look great Disco I'll have to try you cooking method for these. Did a rack of beef ribs on the smoker once and they turned out mushy. Guess I should have finished them up on the grill. But yours look like they turned out perfect.

    I plan on doing a Cajun Turkey for Thanksgiving and using this rub recipe I have. Here you go: 2 tbsp paprika 1 tbsp garlic powder 1 tbsp dried oregano 1 tbsp dried thyme 1 tbsp dried basil 1 tbsp salt 1 tbsp black pepper 2 tsp cayenne pepper 2 tsp white pepper 2 tsp onion powder 2 tsp white sugar

    Welcome aboard Look forward to hearing about more of you BBQ/smoking experiences on this forum. Also feel free to post any Cajun/Creole cooking experiences here too. My 2 favorite styles of American food BBQ and Cajun /Creole. Last night I made up some fish a la Creole and it was great!!

    First time chuck and boneless shanks

    Look forward to seeing how this turns out as well. I need to put in more time making chuck's. But up here the sale price seems to usually be about $5 per LB. And I can find tri tip for that price. So when I have found them for less, they seem to quite a tough piece of meat.

    Maple Chipotle Chicken; It's what's for dinner!

    Looks really good I picked up some chipotle rub and mixed it with a hickory rub and used it on a pork tenderloin. It was really good. Wish I would have thought about using maple syrup to baste it like you did with your chicken.

    Teriyaki jerky is one of my favorite styles of jerky. Adding some heat with the cayenne and making it spicy would only make it that much better. Made my first batch of pork jerky last month. It was Thai style. My next batch will be teriyaki style.
