That is how I started off. By learning the basics. Pork chops, ribs, loins, shoulders, chicken and Turkey before giving brisket a go. Gave me the opportunity to learn some basic stuff before attempting brisket.

So I picked up an instant pot sous vide at Freddy's. It was $69.99 on sale and another 20% off. So I think I got an ok deal.

I'll have to try you cooking method for these. Did a rack of beef ribs on the smoker once and they turned out mushy. Guess I should have finished them up on the grill. But yours look like they turned out perfect.
I plan on doing a Cajun Turkey for Thanksgiving and using this rub recipe I have.
Here you go:
2 tbsp paprika
1 tbsp garlic powder
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp dried basil
1 tbsp salt
1 tbsp black pepper
2 tsp cayenne pepper
2 tsp white pepper
2 tsp onion powder
2 tsp white sugar

I need to put in more time making chuck's. But up here the sale price seems to usually be about $5 per LB. And I can find tri tip for that price. So when I have found them for less, they seem to quite a tough piece of meat.
When you get the chance to try it, let us know how it turned out.

I picked up some chipotle rub and mixed it with a hickory rub and used it on a pork tenderloin. It was really good.
Wish I would have thought about using maple syrup to baste it like you did with your chicken.
Teriyaki jerky is one of my favorite styles of jerky. Adding some heat with the cayenne and making it spicy would only make it that much better.
Made my first batch of pork jerky last month. It was Thai style. My next batch will be teriyaki style.
Gotta love it when things don't go as planned and even turn out better.
That happened to me on the 4th of July. Made pepper DR pulled pork. I thought a pepper DR BBQ sauce would go great with it. But I screwed up my measurements and didn't have one ingredient to make the sauce. I tossed out 1/4...
