    Cooler time??

My experience is you can easily keep it in cooler wrapped in foil and a towel for 3-4 hours.

Eric and your family have continued to be in my prayers. Please keep us updated and let us know if there is something specific that we can pray for.

    Smoking Brisket 24hrs in advance

I assume when you say you're going to smoke it Friday night that means it will be done sometime Saturday. Depending on how far in advance you are going to have it done I would wrap it on foil, wrap that in a towel and put it on a cooler to keep it hot. I probably wouldn't refrigerate it. I've...

    Need help pricing this smoker

I'm with fivetricks. Is that a firebox on the bottom? I don't see dampers or anything, etc. I think you might find people being super hesitant because it looks like a somewhat unconventional design from what I can see in the pics.

    Smoking turkey

I'll second the recommendation to spatchcock the turkey. It will cook faster and will definitely cook more evenly.

    New wood smoker

I have a Lang which bit more expensive than box store smokers. I used box store smokers for a number of years and you can make some good barbecue on them. The biggest difference for me is temperatures are MUCH easier to control on my Lang because of the gauge of the steel. Also it's most...

    Lang 36 Deluxe-Sold

Someone's going to get a good deal on this! Out of curiosity is it the time/babysitting that a stick burner takes or just not as interested in BBQ or something else that's kept you from using it.

    Bacon bits and more..lol

I can hear the paramedics now...."Clear" all the while the patient thinking "it was worth it". That looks incredible.

    Anybody cooking this weekend ?

Going to experiment today with a new way (or at least new for me) to cook ribs. Dry loin back ribs a la "Rendezvous" in Memphis. They cook for about an hour 18 inches directly over coals. I'm just doing one rack to test this.
