$25 is good deal.. usually i see the silvers going for $35-$50 used.. that cylinder collects the ashes.. its on the gold series but not the silver series....
or have u thought about a propane smoker? .. maybe be the easiest solution for u.. im sorry didnt realize ur paralyze.. the WSM might be to much of a hassle.. i would almost go for a Masterbuilt propane smoker...
what temp gauges are u using? ur not using the one that came on there are u? i had a CG that i added different temp gauges that gave a more accurate read.. and the only mod i did was make a charcoal basket.. i would fill it half full with unlit charcoal and than add about a chimney full lit on...
i always cook them around 250 degrees and foil them at 160 and ive never had one go over 12 hrs.. usually 8-10 hrs max...i say if u get towards the 8-10 hrs mark and ur meat temp is still low i would wrap it and turn up the heat... low and slow doesnt have to be at 225 exactly.. its ok to go up...
that's my biggest problem there are a bunch of brands in the $100 range and I didn't know if one is a lil better then the other. I've looked on craigslist and everything is $500 or more or they are trying to get retail prices for the cheaper models.
Ribs I use durkee chicken and rib rub. All I do is had brown sugar too it on the ribs. Chicken I just use the season. I also like any of the weber seasons
i bought the book couple months ago.. and i enjoy it.. good book to have..which im a myron mixon fan so it was neat to learn a little bit about his life..
