I'm in Mobile Alabama this week working and had to try out the local Q. I knew The Brick Pit was on Man vs. Food so I had to try it. As I walked in I noticed a gentalman putting wood on the fire so I asked if I could take a look... And he said yes! Here is some serious Q-view

I like this idea. I have an offset smoker but the spot nearest the intake is super-hot. I think I'll sear them there and then move them off to smoke. Thanks paul01!
I have never heard of this ceramic rocks kept in the freezer, sounds brilliant! Is this your idea or do I just live under a rock and everybody is doing it?
If I wasn't going to smoke regularly I would have to go with something electric like a MES. Also, make sure to check Craig's list before you buy something new.
