    3-2-1

Spares or babybacks? If babybacks shoot more for a 2-2-1. Are you putting extra liquid in the foil when you wrap? I generally find mine get much more tender with extra liquid to steam in there.

    Pork Steaks with Q-view

Thawed out a pack of steaks this morning and rubbed with some Big Bob Gibson's. Coated the potatoes in oil and some of Paula Deen's house seasoning (got it as a gift...sure is convenient to have on hand). On the Weber Kettle for about 1.5 hours. Sauced at the end for a few minutes. Very juicy...

    Turbinado Sugar vs Brown Sugar

If you want equal measurements, you need to use weight instead of volume. Find out how much .25 cups of brown sugar weighs and them use the same amount of Turbinado or white.

    Substitute For Mustard?

I've never had any problem getting rub to stick and I don't use mustard. Some will fall off, but plenty will stick. Give it a good rub and let it sit for awhile. The rub will get wet (the salt pulling moisture to the surface) and then you can add more rub if you want. Should stick to itself...

    Another Grill from CL Question.

Grill 1: "This is a great, huge, 25 inch kettle charcoal grill. The grill is hardly used except for the home-made handle. The factory handle broke, but wasn't very good to start with. Pleas e mail me at [email protected] or call 662 298 4949. Thanks." Grill 2: "I have the large Weber Kettle for...

    Which butt do you prefer?

The meat in that bone is always some of the best to me and I love sliding out the bone on a perfectly done butt.

    ECB Charcoal Basket

I've read through those quite a bit, but as small as the ECB is, I was hoping someone might have stumbled on something out there that works well.

    ECB Charcoal Basket

Anyone use a charcoal basket in the ECB? How does it work? Anyone know of one I can buy or something that can work as a charcoal basket for those of us with limited metal working skills? Thanks!

    Brining a butt?!?!?!

I'm not in a position to read the rest of the replies tonight, but Alton Brown's pulled pork episode is awesome. No matter how I cook a butt I use the brine and it turns out awesome very time. Water...pickling salt...molasses...and then I add what I like. AWESOME! You can't go wrong brining...

    Memphis in May 2008 Pics

Turn in time was EASY. Of course we started WAY too early. A bit of nerves mixed with just the worry that we would be late. Next year I'll get a couple more hours of sleep Friday night! We were hoping to be about in the middle so we were close to our goal.
