I would like better gas control here is the summer it gets to be fun challenge to try and keep it in the low and slow range when I am doing Butts. And since mine is on the East side of the house for now I get a fair amount of solar heating of the cabinet.
I really need to look into this upgrade on the SV. I also thought about using a couple of charcoal briquettes and placing the wood on them like the snake method in a kettle.

The new smoker is my reward for paying off my truck. I currently also have an older SkokeVault that has been a decent rig. With it being the smaller SV i always hated cutting my ribs in half.
I wish my first cool of drumsticks looked that good. Drumsticks are a staple in my house and i get chastised when they are cooked in the Oven because i am to much of a ,( well you know) to go out in the snow for just drum sticks.
That is not to bad at all. i would use a SOS pad for the hard scrubbing then a bit of coaster salt with grape seed oil to finish it out. Then wash dry and place in a 200 degree oven for 10 min and oil.
