I'm not so proud that I can't admit when I am wrong. Hell, I'm wrong more often than I'm right. I have recently bought my first offset smoker, upgrading from an electric. Every time I would post for advice, one question kept coming up. "Are you using splits?" I was using chunks since my smoker...
Ok, doing my test smoke and this is just weird. Before all my mods I had massive temp swings and it would run really hot then cold, now the temperature is fairly steady but I'm having a hard time getting it up to temp. Shouldn't it run hot if anything, not colder?
A while back I asked for opinions of an offset smoker. Although I was cautioned against getting the Oklahoma Joe's Canyon smoker. I went ahead and tried it out. All the reviews from family tell me it's the best food I've ever smoked. So I am for sure stuck on offset smokers. I've slowly made...
Thanks for all the input. I had my intake at 50% and the stack at about 20-25%. It was my first go at really smoking something with it. It actually turned out really good. There's none left. I was told they were the best ribs I've ever made
First off I want to thank everyone for always being so kind and helpful. It is really appreciated to us newbs. I recently bought an COS. Today is my first day to actually use it with food. I've done a few test smokes without meat and thought I did ok. I'm doing well to keep the temp between 225...
Really appreciate all the advice and info you gave. I'm still on the fence on what if anything I will get in the near future. This is not a decision I'm going to rush into. Whatever I get will have to last me several years, so I'm taking my time with my decision.
Thank you so much for your detailed and honest reply. It gave me a lot to think about. Where would you suggest I look for wood? Right now the only source of wood I knowingly have is bundled firewood at convenience stores and I have no idea what type of wood that is. I live in Indiana but from...
My wife says I won't have any trouble tending to the fire, because even now I don't set it and forget it. I'm checking temps at a minimum of every hour if not more. The wood source might worry me some. I was going to use precut wood chunks. I don't know of anywhere around here I can get wood...
I've been smoking for a few years and have recently really got serious and really invested in doing it. I currently have a Masterbuilt electric smoker. It's easy and takes a small amount of wood chips.
I've gotten a blessing from my wife to upgrade. I'm thinking of getting an offset smoker...
I saw this on sale today and was wondering if anyone had any experience with this exact model or the brand itself. From what I can tell this is a really good price and I'm thinking about upgrading. (My wife has given her blessings) It's a electric pellet grill and smoker, and would replace my 2...
Experimented today with pulled pork. Been watching Mad Scientist BBQ videos on YouTube. Did everything as instructed but didn't turn out as good as expected. It was still good, just not what I was hoping for. I used salt and pepper only for the rub. Cooked 9 hours at 250 (5lbs) until 200...
Those all look amazing. Exactly what I was asking. Thank you very much. I now have 2 of the 3, the pork shows and the fattie are speaking to me at a cave man level
I've been smoking for years, but have only gotten serious about it recently. I have smoked the main things people go for; brisket, pulled pork, ribs, sausage. I have also ventured out and smoked meatloaf, and fish. I'm looking for new and interesting ideas of things to smoke. I have on my list...
Grew up in Texas until my job had me relocate to Indiana. Not new to smoking, but do consider myself very much an amateur. I've really been learning a lot from these forums, and based on advice I read on here, I made the best pulled pork and ribs ever. Will be making more for the 4th, and I hope...
