Just had to do it and it was worth it. Used mesquite and a little cherry. Had to pull it out of the smoke a little sooner than I wanted and finish it the oven, double wrapped in foil. It turned out really great nice and moist just had to use tortilla wraps and bbq sauce. Yum yum!

I took it to 197 then pulled it out, I already had it double wrapped in foil at 160 and then wrapped it in two towels and let it rest for an hour. Wanted to let it go for two but the wife was hungry so we ate it a little early but it was so good!

Everything turned out great. I am amazed at how tender the ribs turned out. I did underestimate my cooking capacity and had to borrow my neighbors gas smoker so I could get it all done. Overall everything turned out perfect!
