Never used a water pan in my Traeger pellet smoker. I would think the humidity would cause temp. problems with the pellets getting moist. Also I would think it would screw with the electronics......
Actually the JD Charcoal pellets are made from the same wood that the barrels are made from, just not the barrels themselves. They burn down unused barrel staves to charcoal, then filter the whiskey through it. Then make the pellets once the charcoal is spent
The bigger logs I would turn into chunks. There's a guy around where I live that will sell you a bucket of chunks of various types of fruit wood, other woods for $5.
Branch size I really don't know, I just use chunks on my little offset.
Pulled Pork was Great Yesterday. Had just enough left over for my wife and I to make some pulled pork sliders to take to work for lunch today.
Now to plan the cookout for the 4th of July!!!

I decided to go with the Pork Butt for some pulled pork. Got up real early this morning and got it on the smoker. It's not a big one, only 4 pounds. Will be ready to eat way ahead of dinner time!

Like others have said I don't think you will have to worry much about angering the neighbors, you will be fighting them off tooth and nail from coming over, lol

Never had this happen with any kind of pellets I've bought, Might have gotten a bad batch of one of them, sounds like metal filings from the dies or excruters they use....
I have 2 that I use regularly. I don't count my ECB as its gathering dust. But I've been doing a LOT of research into making my own UDS now.....Wife is like "really? you have 3 and now you want to build one" LOL, Hey I say, how many pairs of shoes do you have?

My go to is SPOG (salt, pepper, onion, garlic) sometimes I throw in some Paprika and Cayenne pepper. Jeffs rub's and sauces are great too. I did use McCormick when I first started this hobby but when I read the ingredients some of them are WTF? so I stopped.
