    Hi Todd, Heh Heh...OK I'll break out the spare.  I've been working on a few projects around the house so my Smokes have been few, however those times that I do cold smoked bacon and cheese you can bet I'm using your Amazing product!  Take Care.....

    Thanks Al....  I just wanted to know if there was anything else I could do before contacting them.  I know they have great customer service.  Two years ago the plastic switch on my receiver unit broke off.  I contacted them and explained.  They sent me a replacement and like you  I didn't have...

    Aloha All, One of the temp probes on my faithful ET-73 may be on its way out.  On the last two Smokes i used it on, the probe that is connected to the Smoker port of the ET-73 would indicate an LLL reading when I placed it in the Smoke Vault.  I lit the Smoker and after a few minutes of it...

    Macadamia wood smoke

    Aloha J, I live close to  a macadamia nut orchard and the owner lets me have all the wood I want for my Smokes.  The the wood gives off a very subtle nutty  smoke and I've used it for smoking ribs, marlin, and wild pig.   I think it will do well with cheese.

    I'd check out the recommedations for making bacon that several of the members here have suggested. That AMNS is just the ticket you'll need for cold smoking your bacon.

    Hey Gene, Time flies when you're having fun yes?   The best part is that you can now tailor your sausages to your tastes and not depend on the commercially produced ones.
