I've not done a huge butt, just little ones that took only about 4-5 hours.
Like LarryM said, stay with IT and you should be good to go and let that
baby rest as long as possible.

I smoke a lot of birds and I can tell by looking it was juicy and
full of flavor. The butter under the skin eh? I inject but will give
that a go next time...James
There are some great things to smoke up and still be
healthy. You can smoke almost any vegetable, mix
them up, put them together.
Chicken smoked but remove the skin AFTER smoking
and before eating. Stuffed bells with turkey meat instead
pork, etc.

Just wanted to shout it out I got the A-Maze-N smoker and can't wait till I can

I did not know that garlic loses flavor if refrigerated or froze. Note to self: keep

Nice going GB. I smoke whole chickens all the time, I love them. I keep the temp
at 225-240 and never have a problem. Just look for the internal temp of 165*.
As for soaking the blocks, hmmmn, I soak chips but not blocks or hunks of wood.
