Soo... This 4th of July weekend we are having smoked pork baby back ribs, and pork Boston butt. Here it goes.

Royal Oak charcoal, and Hickory logs in my TMLE
250*F target temp
Try using 12" long split logs I can only use 2 or 3 at a time without charcoal to stay below 275. I imagine if I put 4 or 5 splits in at a time it would hit 350-375 no problem. Also opening you ash drawer partially will get you LOTS more heat.
Target temp was 250*F.
The smoke stack extension is more or less to keep smoke outta everyone's eyes at a all day BBQ. And Post Oak I used Post Oak along with Royal Oak Charcoal.
