one other thing is that while your cooking and smelling that smoke all day you may not taste the smoke in the meat since youve been in it all day?

ok when i got the cooker it had a pull out charcoal "tray" with no way for the coals to get air..i modified it by cutting out several squares in the bottom to put expanded in the bottom and up the sides so it is now a "basket"..i hope it works...has to be better than it was

i made a charcoal basket in my fuel drum cooker kinda like the UDS version but bigger..its about 3 ft wide and 6 ft long with expanded on the sides going up 6"... its on a rail that slides out of the drum
i want to use the same principle of lighting the coals with unlit on bottom and place lit...
i need to make a giant chimney starter, one that will hold maybe 5 lbs of charcoal. could i use a galvanized bucket for this. i guess im asking would the galvanized bucket be ok as long as im not cooking with it.
i have noticed some of the cheaper chimneys are made of what looks like cheap...
now pickle them
i have chickens and we get a good bit of eggs every week..
i have never tried to cook them on the smoker but i have tried to smoke them after boiling which didnt turn out well ..to much smoke
will try your method next time and off the smoker into the vinegar !!!

i have a good mustard based sauce
im from central south carolina and for me nothing is better on pulled pork
1 1/2 cup yellow mustard
1 cup brown sugar
1/2 cup ketchup
5 Tbs apple cider vinegar
1 Tbs Worcestershire sauce
1 tsp coarse black pepper
1 tsp onion powder...
mork thats nice, thats what i wanna do..im gonna get one of those metal carports with the back side closed in (long side).....i like the lattice..ill do that on the sides of mine
