    For a seasoning that’s kind of personal preference but I’ve done 50/50 in chorizo that wasn’t bad, but not my preference. I go in reverse in summer sausage go 80% deer and 20% pork in brats I reverse the ratio good luck

    Haven’t used that style cute little guy biggest problem I’ve had with diesel is the smell, but that has been the jet engine style. Not sure the size of the shop or insulation but at 8 kw thats a little over 27k btu if I did the maths right

    It’s game day fried a small piece that fell off definitely can taste the jalapeño heat, and had a few coughs during the frying. Not stupid but can definitely know it’s there. I’ll check in a few hours

    Using pop’s low salt brine 1/2 c kosher salt , 1 T cure ,1/2 c brown sugar, 1T minced garlic, and on one batch 1/2 jalapeño powder. Into the fridge for 14 days or so then to the smoker hopefully this turns out. Pork belly $3.99 at costco so not out a ton of money

    I stay around 170* for summer sausage as long as you stay away from your heat source I think you will be fine especially if using all beef.
