The smoke stack extension to grate level works well. And I've heard inverting the chacoal tray to use as a baffle also works. If you really want long slow burns, invest in a charcoal basket. Get your self a 24 by 24 inch piece of expanded metal at home depot, cut 6 by 6 inch squares off of...
Congrats on the chargriller. First brisket, huh? Rub it the night beforecook between 225 and 250use lump instead of brickettesspray with apple juice every hourwrap at 160 and take it to 195 internal tempforget the minutes per pound equationcook it to temperature and not timegive your self...
I say make a UDS (ugly drum smoker) or BDS (Big Drum Smoker) clone. If I had a choice, the UDS. Why? Well can you imagine a butt ugly barrel that produces some quality 'Q? You'd be the envy of all yur friends.
Definitely gonna hit Stubbs, if not to eat then to get some of his bbq rub. It didn't taste like much to me when I tried a pinch of it by itself, but when I used it on some ribs it was great. If I use Stubbs rub, I don't even sauce my ribs.
This is gonna sound like a stupid question, but what was the flavor like. I know what brisket tastes like, and pulled pork, but not chuck. Is it more "meaty" or "roasty"? Geez, I sound like an idiot!
I think you made a good decision Patook. I bought the 24 inch CCSV also, on the advice from Debi, and could not be happier with it. Some purists might call a gas smoker "cheating", but I prefer to call it "convenient." Remember to season it before you do your first smoke in it. And the...
Apple and cherry are really good on pork. Just do like Debi said and treat them like a butt. I dont know if it's true or not, but I've heard meat won't take any more smoke after it get to 140 degrees internal. (let the debate begin!)
Hey Gang. Gonna be in Austin, Texas over the holday weekend. Anyone have any suugesstions for a place to get good 'Q? I have a Rudy's here, so that's out. Any suggestions would be appreciated.
Sounds to me like you're on the right track. One thing did hear about cabinet syle smokers be electric or gas is that the most consistant heat is around the middle racks of the smoker. I don't know if this is true or not. If i'm doing a flat, or just one butt, I'll ususually use the middle...
Hate to be the bearer of bad news, but it's the same thing here in El Paso. I went to buy a brisket for smoking and they only had about five left. All of them were very ugly. When I asked the meat guy if he had any in the back, he said he was unsure of they were gonna get anymore for the...
Welocme Ken. Listen to these folks. That galvanized trash can smoker can do bad things to you. Pleanty of good "first" smokers out there, be it gas, elctric, or wood. Might as well do it right the first time!
