    I can get 4 or five good smokes out of a 20 pound tank. I'va also found that they are cheaper to fill if you go to a propane place instead of exchanging them at Lowes, or Home Depot.

    Or you can call me. I live about 30 minutes away from Las Cruces, New Mexico. The university there has a whole research program on different types of chiles. There's some shops in Mesilla that have ground chiles that I've never even heard of!!

    I can't give you any advice as I dont own this type of smoker, but I do know a butt is very forgiving. Rub it, and smoke it,rest it and pull it. Some say it's better than brisket.

    Another question about the offset

    I agree with Pig. Offsets that don't have tuning plates almost always have a hot spot right next to the SFB. You can use a water pan as a baffle if need be, or make some tuning plates if you're so inclined. Some offsets vary quite a bit from one end to the other also.

    You can go to your local restaurant supply store and get a plastic non-pourous 5 gallon bucket for about 12 dollars. (at least thats how much mine was). They are made of lexan plastic (non-pourous) and food grade which does not allow bacteria to get into all the microscopic nooks and crannys...

    Pickle slices, onion, mustard and 'Q sauce. Thats about all a good brisket needs. You might want to keep a few slices of cheddar cheese nearby. My local joint serves up individual slces of cheese, and it complements their brisket very well. Not to put on the sandwich itself, just to have it...

    I think if it is going to sit directly on the heating element, you should go with cast iron. I saw some 8 inch cast iron skillets at Academy Sports for like 4 dollars.
