    You can also buy those really big zip lock bags and put them in those. They won't be frozen that long, but you do want to avoid the dreaded freezer burn. Especially since you want this to go off without a hitch (i.e. impress your buddies). BRING ON THE STRIPPERS!!

    I found that with just modifications, the chargriller works very well. A charcoal basket is a must, and extending the smokestack to grate level. Don't forget to get a coulple of oven thermometers too. The stock thermometer is junk.

    You can trim the fat to 1/4 inch if you want. And use plenty of rub. I have found that briskets can take alot of rub and alot of smoke.
