    Smoking pellet flavor

Sportsman's Warehouse has Camp Chef pellets & GMG Blended pellets. Cabela's has their own brand and they say they are 100% true to species. Walmart, Ace Hardware, CAL Ranch and Tractor Supply might also be worth a look or phone call. I use Pit Boss Competition (MHC) for cooking in my GMG and...

I have been curing turkey breast for a few months. I got several bone in breast for $ .99 per pound. The Board's Head brand of smoked Turkey is $8 to $12 / #. The flavour is similar and it does have a ham like taste.

Brine cured chicken breast Morton's Tender Quick

Chopsaw the chicken looks great! I love smoked chicken and yours made me want some! What size netting did you use and would it work for large breast? I tried trying a couple and the presentation was poor.

    Book recommendations?

The books by the Marianski's and Rytek Kutas are the standards for education & reference. Burce Aidells' complete sausage book is worth a look as is one by Michael Ruhlman. The gang will be along shortly to add to the list.

Hi all, I got tired of paying $8 to $12 per pound for smoke turkey breast so I cured and smoked a few myself. If the breast is properly cured, smoked and vacuum sealed, what is a safe amount of time that I could keep it in the refrigerator? I have processed 8 breast so far and they are in the...

    FINISHING SAUCE (for Pulled Pork)

Tony Chachere's Cajun Seasoning is mostly salt and a small amount of peppers and garlic. The recipe is in one of his old books and I think I have donated it to Goodwill. There are several posts that look similar, but I have not tried them...

    Smoked Salad Dressing

I have never tried smoking premade foods before, besides cheese.  I should give it a try.   I do like smoking vegetables and making your own vinaigrette/dressing, the taste is awesome.  It works great with tomatoes, onion, garlic and carrots.
