    Seasoning A New Smoker

    Welcome to the SMF Bernadette......glad to have you on board. Most smokers only need about 2.5-3 hours to season. Just coat the inside good with oil (a spay is the easiest) and get the heat up. Remember to have fun....it's not rocket science. Steve

    I use chunks in my Chargriller and I don't see a need in soaking them. I rarely have them flame up on me and they will smolder for a along time. Steve

    I agree with TMW....mix it up a little. I use my Chargriller for grilling more than smoking. It grills GREAT!! Gotta love those cast iron grates. Steve

    I've got a 8lb shoulder rubbed and waiting in the 'fridge. I'll get it started in the morning along with a fatty or two. I might do ABT's too if the wife will go to the store, I've got the next to days off and I'm not leaving this house! Steve

    Thanks....I've got 2 bells, 4 jamaican hot chocolates, a few serrano's, japs, cherry bombs and a few sweet banana's. All were started from seed in a friends greenhouse....that means they were all free. Steve

    Listen to Dude....as he is very wise. I think most people here do the 3-2-1 method or a modified version of it. It works great for me on my Chargriller. If I sauce then I do it the last 30 minutes or so. Steve

    Well the butt turned out very good.....finally got it to 200* after 14 1/2 hours. I kept the CG between 240-220 most of the smoke.     The fatty turned out very good, except most of my cheese ran out of it. I guess I didn't get her sealed up good enough. The butt is at 188. I'm thinking I'll pour off the juices when I take it off the smoker so it doesn't sit in them while it rests. It looks like I have at least two cups worth...

    12 hours in and the butt is at 178... that thing had one hell of a plateau. Shouldn't be too much longer now. The fatty is off the smoker and resting. The wife had to run into work for an hour or so, so we're having a late breakfast. She'd better hurry up, that fatty is smelling GOOD. Steve

    Got the fatty on and the butt is looking good. It's 9 hours in and sitting at 162. The fatty is just stuffed with cheese. I'll slice it up and fix some eggs and grits to go with it. Steve
