    SRF has a ~14lb American Wagyu brisket for $60 + S&H. Which comes out to about $4.20/lb. Around HERE, Choice briskets sell for $3-n-change per pound.  Seems like a decent deal to me. However someone nearby (about 20 miles) posted a Prime brisket for $2.49/lb, which is killer (for our area).

    +1 steaks are a little better, IMO.  Vaccum seal 25lbs of it, and throw it in your freezer. Pass the "fish" on to the next guy. ;)

    If you are closing the vents @ 200, and trying to cook 225, it won't happen. Try like 175 or so. It's always easier to increase temps then it is to decrease them.
