    I can remember when, in the early 1940s, my grandfather had a wood smokehouse (maybe 10 x 12) out back, and while I was too little to really know or care about the process, I know they used corn cobs for smoke.I think there was wood, too.

    The best I've found is a Gwaltney Ready To Cook. Store where I usually shop has them on sale every couple of months, and I always grab one when they do. Don't know how easy to find they are; other stores here don't sell them.

    Only thing I can think of is the probe touching bone, which will give a false high. I'd certainly insert the probe at the start.
