    Thermapen - how did I live without this?

    About a year ago the wife got a wild hair and went and bought me an instant read therm.  We watch Americas Test Kitchen so I was mildly disappointed when she came up with the Maverik Pro Temp.  I've always felt it was a little slow. Is it just me?  Anyone else have experience with this unit?

    As I mentioned in a different thread, I got tired of the temp discrepancies of my MES30 and now it has 1 setting...275. I adjust my cooking times to that setting and I get a consistent product.

    I'm no expert but I vacuum pack and freeze without the finishing sauce, then add it to the reheat. I'm afraid it will make it mushy.

    Thanks for the bump.  My son is frying his first turkey this Thanksgiving and this is much needed advice. I normally brine smoked or roasted turkeys.  Do fried turkeys need to be brined?
