Do you clean the glass on your smoker door (if it has glass)

Yes. Before using if I was lazy after the previous use or after, when I clean the grates.

    Maverick probe placement

I've just about quit using my Mavericks, primarily because the setup on the new one is such a PITA, but more so because I'm now doing most smoking on a Weber Performer using a Vortex. The built-in thermo on the Weber give me a good indicator as to CC temp and a Thermopop gives me great readings...

    Smoking cheese questions

Let us know how it goes, please. My first attempt at smoking cheese in my MES was a catastrophe. I posted the 'fail' here several years ago. I did have some success later but it was limited. I think the mailbox mod is the best way to smoke cheese because it keeps most of the heat from...

    Best ingrediant to add heat

Did anyone mention paprika? ... the hot Hungarian stuff not the McCormicks or whatever you get at the supermarket. I bought a can of the regular and hot a few months back and have been adding it to my rubs. It adds a great flavor and a touch of heat that is quite subtle.

Finally, our first tomatoes of the year......

Nice lookin' luv apples there, Dave! I've had no luck with tomatoes since moving to Texas. I wait too late to put in plants and the soil temps get too hot and they stop growing. I've been tempted to start seeds in September and plant in October. I never knew that tomatoes stop producing when...

    Maverick 733 instructions

The 733 is a pain in the old arse. I'd give it to my son-in-law but I like him too much. Since I started using the Performer for most smokes, I don't bother with any remote thermo (I have 5 or 6). The Weber thermo in the Performer lid handle assembly tells me if the heat is hi, low or just...

    The mini booster!

Well done, Case!!! Be sure to get Qview and tell us how well it works. I've got a Vortex in my Performer and really like the convenience it adds to fire control.

SMF Friends - Email Scam Alert!!!

This brought back many memories of keys on Vienna sausage, sardines, SPAM and other tinned meats. I wonder if there is any processor still using that technology. I don't think I've seen one of those keys in over 50 years. I'll bet it would blow some gen-x kids minds to see one. Anybody still...

    Canadian newbie

Howdy, kid!!! I take it from the pics that you are not in Toronto, right? Great lookin' pit!!! Looks like you've already got it figured out, tamed and putting out the good stuff. Please, keep the Qview coming, especially after that white stuff you folks get later in the year starts fallin'.

Nicely done, Case! I didn't see any oil on that camp table. Did you not use any? Looks delicious!!!!

    Birthday PP ?'s

I'm confused. Why not smoke the whole shoulder/butt the day before? It's perfectly OK to cut it if that's what you want to do, but always cook them whole for 2 reasons: 1) I don't like to freeze and thaw meat because I think it affects the flavor, assuming that you will freeze the other...

    History of the Offset/Reverse_Offset Smoker

I'm an old fahrter (that's German for traveler, I think), but I don't remember a time when I didn't know or know of someone with a steel smoker. I was reading an article on the history of a tool when it occurred to me that I have never seen any mention of the history of our offset pits. Does...

    First smoke...and fail

I think you did well. You learned some things. You got over your stage fright. You got the butt in the oven. I bet when you got it to temp in the oven it came perfect with a bone that pops out by itself. I think you need to give up on 1) the smoker, get a 22-1/2" Weber kettle off CL and 2)...
