    I'll do it either way. Split the point off for burnt ends. Or, cook the whole thing, and vacuum seal 6 other meals for rainy days. A good vacuum sealer is a must have for smoking meat.

    Nice to have friends with a greenhouse in the winter. Fortunate that way. Also have customers who are farmers. So my fridge and freezer are always full.

    I'll sear multiple ways, depending on the mood I'm in. These happened to have been seared over hot wood coals,after a smoke in the offset.

    Ever since I tried the over the top,I can't go back. I like it with beans,no apologies. Large chunks of hamburger and sausage,and thick. Mom use to say "it isn't chili unless you can stand a spoon in it,otherwise it's soup". Eat a lot of it... And then there's smoked queso,damn.
