    Spare Ribs and Beans with Q-View

    Made a batch of ribs and beans today/  Used hickory and cherry.  I think they turned out pretty well.  Smoked them for 6 hours and sprayed with apple juice every 45 minutes or so.  Put the beans in and smoked them for three hours.  Everyone loved it.

    My first Brisket (q-view)

    I had a 6.8 lb brisket.  I rubbed it the night before and then put it on the smoker yesterday morning about 5:30.  Wrapped it in foil after 5 hours  and then pulled it when it hit 190.  That was about 4:30.  I then wrapped it in towels and stored it in a cooler until 6:30.  Cut and served it...

    Smoking My first Brisket on Saturday (Qview will be up sunday)

    Have a 6.8 lb brisket, have my rub made, plan on trimming the brisket friday night, applying the rub, wrapping in plastic wrap and storing in the fridge until sat morning.  Have pecan and hickory to smoke and am going to use lump charcoal.  Plan on starting putting the meat on about 8:00 AM...

    Did Chicken Quarters on my new smoker yesterday

    Sorry but I forgot to take pictures but I cooked them about 200-225 for 3 hours.  Marinated them for 4 hours in italian vinigarette and then put the rub on them 1 hour before cook time.  Put them on the smoker about 2:15 and pulled them off about 5:15.  Used Frontier Hardwood Charcoal and spilt...
