    Corned beef question

    I’ve made 5-6 of them. I’d still soak it in ice water for about an hour, switching the water a few times and not use a rub with salt in it. The 60% lower sodium is still salty as hell if you don’t soak it.

    Interesting. Does your smoker not put out enough smoke? Do you like it really Smokey? Just trying to figure out why you’d do this? I’d watch the IT to make sure you’re out of the unsafe temps within a certain time.
