    Got a chance to smoke some cheese last night living In S.Florida we don't get a lot of chances temps dipped down in 50s  and I jumped on it :). Smoked some Gouda,Swiss,Pepper Jack,Cheddar,Wasabi horse radish,and Havarti, smoked 2 hrs with Apple chips and I smoked some Gouda with cherry I threw...

    Question how long is it recommended to smoke cheese and when smoking is it better to do in smaller pieces or large. Is cherry and apple good to use I live in South Fl. so need to be ready for the cold fronts :).
