Low&slow...thanks for the info. I just got a brinkman smoke n pit and have had troulbe with too much white thick smoke, so I am going to try your way of doing things. I think that will work good.

A great big THANKS to everyone here! I went to the OU/TX game (Boomer Sooner Baby!) then went home and smoked two 9ish pound butts, my first. They turned out wonderful and my friends and family think I am the Smoking Goddess. I owe it all to you all and especially Meowey's tutorial.

Now I'm torn. Just about had my mind made up up for the CG. But I love my GOSM gasser and the 3005C is tempting. Maybe I should get both, one for the house and one for the lake.
I currently have a GOSM and love it, but I would like to get a charcoal smoker and then someday move on to a wood smoker. Do you experts out there have a recommendation. I would prefer something that does not require a lot of mods. I'm not just real handy with that type of thing.

I am just up the river from you in Oklahoma. You are in the right place. I got a GOSM not too long ago and found this forum. I have learned alot here from everyone. I have meatloaf on as we speek. I hope its ready in time for the Texas kickoff!
