    It held together surprising well. After I bagged it (gallon zip lock bag) I put it in the freezer for about 20 minutes while the smoker was heating up.

    The weave could have been a little tidier. The sheer size of the loaf when I got done was too big for the bacon, so I had to weave in 1/2 length slices to make it stretch all the way around...but other than that.

    Yeah...they don't get too far away when the smoker is fired up. As far as the rye goes, I've seen people but it inside the fatty, but to me, it seemed like it would just get soggy, so I bought a loaf of Rye and just made a sandwich out of the sliced fatty.

    If you say so. Have you ever asked for fresh wasabi from a sushi place (high end one)...it does not come out in a little ball of paste, but finely grated. Most pastes/powders do not contain real wasabi (or very little). It is expensive as it is difficult to grow and has a short shelf life...

    It is pretty similar. Most wasabi is mostly colored horseradish based because true wasabi is not that easy to come by. You must not be a big fan of sushi/sashimi?

    At home I have a modified SnP...the mini big betty that I build recently (it will be going to the cabin next year). A thermos brand charcoal grill. At our cabin, we've got a little hibachi grill and a weber kettle...and the fire pit of course.
