Got myself a smoker on a trailer, never smoked before.

That is awesome. The more you use it, you will begin to master it. Pretty sure you just became the star of the family reunions, or at least the "a buddy of mine...." of everyone you knows best BBQ stories! Treat her well, and she will treat you to many treats, guaranteed!

    Verdict on wrapped vs unwrapped

Sounds good. My wife and I have a way of doing baby backs that we don't stray from anymore too. I make a mixture of yellow mustard, worchestershire, and spices, then coat the whole thing. I char the mixture onto the meat on a hot grill, flipping and recoating until I run out of mixture. After...

Nice! I love me some portobello!

    Elk Burger Inspiration

I did end up taking it to a bit higher temp due to the bacon, but I was afraid of overdoing it, so I pulled them. Bacon could have used a little more crispness, but I didn't feel at all that it was unsafe. I'll certainly take this into account on the next round

    Elk Burger Inspiration

And here is the finish! Absolutely delicious, next time I may try to find a way to get the bacon and onion to bond with everything else, but even when it falls apart with slicing, it was great to eat. Thanks again to @SmokinEdge for the inspiring post! Just goes to show, there are tons of...

    Elk Burger Inspiration

So I had never seen stuffed onions before, until a recent post from @SmokinEdge got me inspired. He used sausage, but I've had some elk burger in my freezer for a while from my dad's kill. I decided I'd would use some for onions! I didn't have a melon baller, nor did my local Walmart, so I used...

    Stuffed onion

On second though, I think I'll use the inkbird and just go to about 145 IT. Thanks for the inspiration!

    Stuffed onion

Alright, quick question: I got 3 of these puppies built (I'll post a new thread with pics later), but my wife isn't a huge fan of alot of smoke on bacon, so I decided I will just bake them. It's 6 strips of bacon outside, and 1/3 pound of elk inside each. Any idea on temp/time of the bake?

    Stuffed onion

Thanks edge and chopsaw! Good idea about the head space, hadn't thought of that yet.

    Stuffed onion

I think I'm going to try these today. I'll use some elk burger, chopped onion and bell pepper, cheese and an egg in the stuffing (worried that the elk burger is too lean, so the egg should help it stay together). Do I need a melon baller to carve the onions out? Or does a spoon work well...

    Pork butt

Me too. I pull at 201 IT, then I wrap in foil (if I haven't already, to push through the stall), then I wrap in a few old baby blankets and throw in a small cooler for as long as I can. Sometimes an hour, sometimes a few hours. Bone pulls out clean and I haven't ended up with mush. Still looks...

I just had the longest smoke of my life

How often were you spritzing? And was the sweet tea cold? Sure seems like a long stall. But I suppose if you have the time and the means to wait it out, all that matters is the end product. Looks like it was tasty.

Bear’s Smokers FREE to good homes. ALL GONE !!!

Bear, I don't spend near as much time on this site as many others do. But yours is a name I recognize every time I've logged in. You've been a huge help to so many people here; and although I don't really know you, somehow your pay-it-forward attitude and generosity doesn't surprise me one bit...

Very First Overnight Cook - what do you think of these digital thermometers?

I was using a maverick hd-32 (which was great), but my wife recently bought me an inkbird IBT-4XS. I am in the process of using for a third time right now, it's been perfect so far. I like the magnet on the back, I stick it to the underside of my grills side shelf, since it sits right next to...

My last fear before a purchase.... must be stored outside.

Well, definitely not indoors. I would think a decent cover should take care of you. With a few good uses, the interior should have a good seasoned coating of smoke and grease, rendering basically imperviable to the humidity. As for the outside, just try to keep the snow off of it, and I think...

    Wifeys birthday brisket

What a busy weekend it turned out to be! Well, the time was starting to concern me, so I raised the heat to 280, and to my surprise, we cruised right through the stall! Never did have to wrap it, and was able to hit 203° and pull it at 4:00. Every thing was working great! After about an hour...

    Wifeys birthday brisket

12 hours in, IT sitting at 154. I'm working on taking the heat inside the smoker up to around 250-270. I want to get it to 165 or so and crutch it. Hoping to pull around 3 or 4 o'clock, but looking like it might take a bit longer.
